Rolo Brownie Bites

Since I started back in the grind with school this week, I went ahead and made these "Rolo Brownie Bites" over the weekend so I would have something to snack on while I read away. :~)


On a side note....I LOVE.LOVE.LOVE little bite size snacks and I'm SO glad restaurants and fast food places are changing up their menus to offer snack or small plate options now.
(Houlihans has the BEST menu so far I think, but Dairy Queen has their "mini" blizzards that I love, and I just noticed McDonald's offering smaller meals too now-at least the one by us does)
Most of America's restaurants/fast food have a distorted view of what a "portion size" should be and it's led to this obesity epidemic.  

Ok......off my soapbox and on to this excellent recipe!
I originally found the idea on Pinterest but then that took me to THIS website where I found the directions. Word of advice.....DO NOT purchase low fat brownie mix (it didn't work as well for me).

INGREDIENTS
box fudge brownie mix plus necessary eggs, oil & water per package instructions (or your favorite homemade recipe)
24 Rolo candies plus extras for the cook's snack
4 TBS. butter, softened at room temperature
4 oz. cream cheese, softened at room temperature
2 TBS. caramel sauce
1 cup confectioners sugar


Pre-heat oven to 325F then prepare brownies according to package directions.  Grease a 24 cup mini muffin tin with cooking spray and fill each cup 3/4 full with batter.
Then bake according to the package directions
(On her website she says 15-20 minutes but bake according to what your package states....another lesson I learned)
While the brownies are cooking, remove all the wrappers and refrigerate the Rolo candies.
Remove from oven and immediately press a Rolo, smaller side down, into the center of each brownie bite until the top of the Rolo is even with the top of the brownie bite.
Cool for a couple of minutes then carefully remove the brownie bites from the pan to a cooking rack. Allow to cool completely.
To make the frosting, whip the butter and cream cheese together until smooth. Add the caramel sauce and blend. Add the confectioners sugar and whip until creamy and smooth.
Using a pastry or plastic bag with a piping tip, pipe the frosting onto the top of each brownie bite.
Chill in the refrigerator to set the frosting a bit before serving.
Enjoy.......they are just what I need to satisfy my always sweet tooth!
