Mini Omelete To-Go

I made these "Mini Omelet's To-Go" this AM and they were a hit!

Thanks to Pinterest (aka the BEST website EVER) I was able to make a quick and healthy breakfast for my husband and I. He ate his at home while I put mine in a zip lock baggy and devoured them when I got to work. :~)

Baked in individual muffin cups, they ensure that everyone gets the mix-ins they like.I made ours with bell peppers, onions, and turkey breakfast sausages (that are REALLY good.......purchased at Target). Even my husband didn't seem to mind them (and he's a true meat and potatoes guy) so you can sneak in some healthy ingredients too!
All you need is 4 large eggs, 1/4 cup milk, and some salt. (plus any extra items you want to add.....veggies, cooked meat, cheese, hot sauce, exc.)

Instructions
1. Heat your oven to 350ยบ F and coat a 6-cup muffin pan with nonstick cooking spray.

2. Whisk together the eggs, half-and-half, and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.

3. Add about 2 tablespoons of mix-ins to each cup, then sprinkle on a bit of Parmesan cheese, if you like.

4. Bake the omelet's until they are puffy and the edges are golden brown, about 25 to 30 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 6 mini omelete's.
